Ingredients of Sea Salt Ice Cream

Just need to collect the following ingredients to make 3-5 servings first, to start making Sea Salt Ice Cream:-

  • 2 eggs, separated
  • 2 cups (470 ml) of milk
  • 1/3 cup (67 g) of white granulated sugar
  • 1 teaspoon (4.9 ml) of vanilla
  • 1 cup (240 ml) of heavy whipping cream
  • 1 teaspoon (4.2 g) of sea salt
  • 12 drops of blue food coloring
  • 3 drops of green food coloring

Mixing the Ingredients of Sea Salt Ice Cream

Separate the eggs into 2 bowls. Crack each egg in bowl to separate the whites from the yolks, and take one at a time. Put the yolks in a single bowl, and the whites in the other bowl.

Beat the egg whites until theyre stiff. Get an electric mixer on a low speed for the best results. Beat the egg whites till they form stiff peaks, which generally takes about 5 minutes. Use a manual whisk to beat the egg whites in case there is no mixer. It does take a little effort too! Once the egg whites are stiff, set the bowl aside.

Mix 1/3 cup (67 g) of sugar. Measure the white granulated sugar and put it into the bowl with the yolks. Stir together till fully incorporated.

Heating the Ingredients of Sea Salt Ice Cream

Heat 2 cups (470 ml) of milk in a saucepan till starts simmers. Measure the milk and pour it into a saucepan. Place the saucepan on stove top and heat over medium heat. Stir the mixture occasionally on a simmer.

Pour the heated milk into the yolk and sugar mixture. Remove the milk from the heat as it simmer. Carefully transfer the hot milk to the bowl using a pot holder, put it over the yolks and white sugar. Stir until they are fully combined.

Return the mixture to the pot and heat it until it thickens. Pour the milk mixture back into saucepan. Turn the heat to medium and the mixture cook until it is thick like custard in texture. This will only take a few minutes. Never let the mixture to come to a boil and eggs will get scrambled!

Chilling the Mixture of Sea Salt Ice Cream

Stir the thickened mixture into the bowl of egg whites. Using a pot holder, lift the saucepan off the stove. Carefully pour the hot and thick mixture into the stiff egg whites bowl. Stir the mixture well with a wooden spoon to perfectly mix the ingredients.

Stir 1 teaspoon (4.2 g) of sea salt into the mixture. You can adjust the amount of sea salt according to tastes, but 1 teaspoon will definitely provide a nice balance of sugar and salt. Ensure not to over-salt the mixture. Use sea salt for the recipe. Regular table salt will not give the results as desired.

Cover and chill the bowl in the fridge for approx 30 minutes. Stretch plastic wrap over the mouth of the bowl for covering the mixture. To chill the mixture, place the bowl in refrigerator for about half an hour.

Stir the heavy whipping cream and vanilla into the chilled mixture. Take out the bowl. Uncover it to put 1 cup (240 ml) of heavy whipping cream and 1 teaspoon (4.9 ml) of vanilla into the cooled mixture. Thoroughly stir the mixture with a spatula.

Adding Color and Freezing Sea Salt Ice Cream

Add the blue and green food coloring. Add 12 drops of blue and 3 drops of green food coloring to the mixture to give the sea salt ice cream its signature color. Fold the food coloring into the mixture and stir the ingredients till the colour and texture get consistent. Adjust the number of drops for each color for customizing the hue.

Pour the mixture into ice cream maker and freeze it. Transfer the mixture to ice cream maker and place it in the freezer. Follow ice cream maker’s instructions for freezing. Let the mixture freeze completely. In case there is no ice cream maker, pour the mixture into metal cake pans and put them in the freezer. When the edges get firm, remove the mixture and stir it. Repeat several times till the mixture is uniformly frozen.

Transfer frozen mixture to molds to freeze as popsicles for 2 hours. Just to recreate the look from the game, use ice pop molds. Place popsicle sticks into the molds to fill them with the mixture. Freeze the ice pops for 2-3 hours and enjoy!

Better to wait, it’s best to freeze the sea salt ice cream overnight before eating it.
